Appetizers
Salmon Tartlets
1/2 cup butter, softened
1 package (3 ounces) cream cheese, softened
1 cup all-purpose flour
FILLING:
2 eggs
1/2 cup milk
1 TBS. butter, melted
1 tsp. lemon juice
1/2 cup dry bread crumbs
1/2 tsp salt
1/8 tsp pepper
1 jar pineapple or medium
Chipotle Sauce
In a mixing bow, beat butter, cream
cheese and flour until smooth. Shape
tablespoonfuls of dough into balls; press onto the bottom and up the side
of greased miniature muffins cups.
In a bowl, combine eggs, milk, butter,
lemon juice, and Chipotle sauce.
Stir in the bread crumbs, salt, and
pepper. Fold in the salmon. Spoon
into shells.
Bake at 350 degrees for 30-35 minutes
or until browned. Yield 2
dozen.
Bruschetta
Slice a mini-loaf of French bread.
Spread
Chipotle Sauce on each slice. Add
shredded mozzarella cheese and place under the broiler until the cheese
melts.
Chipotle
Guacamole
2 Ripe Avocados
2 Tbs. Lemon Juice
2 Tbs. Sugar
1 Tsp. Salt (optional)
2 Tbs. Garlic Powder
4 Oz.
Chipotle Sauce
1 Cup tomatoes (canned or peeled fresh)
Cut avocados in half, remove seed, scoop
the meat out of the peel and place in blender or food processor. Add
remaining ingredients and blend the mixture until it is smooth. ENJOY!!

Eggs? You bet!
Add
Chipotle Sauce to your
favorite deviled egg recipe.
Have
a Wine and Cheese party.
Use
Chipotle Sauce on cheese and crackers and serve it with Pinot Grigio
or Riesling wine.
Veggie/Cracker Dip
Mix
Chipotle Sauce with whipped cream cheese to create a delicious dip for
vegetables, crackers or chips. We
use an 8 oz. cream cheese to
one jar (any flavor). You may
want to play with the proportions.
Pinwheels
For a delicious and very unique hors d’oeuvre, mix 8 oz. hard cream
cheese with one jar
Raspberry Chipotle Sauce and spread
on tortillas. Roll the
tortillas and cut into pin-wheel bite-size servings.

yogurt.

For
a really unique corn bread mix a Krusteaz Cornbread mix, but substitute ½
cup of the liquid with ½ cup
Raspberry
Chipotle
Sauce.
That’s all there is to it.
For those of us who love Chipotle Sauce, we substitute the whole
cup of milk with 1 cup of our Chipotle Sauce.

Main
Dishes
Easy Chicken Pasta
8 oz. canned
chicken
8 oz. Pasta (dry)
8 oz.
Chipotle Sauce
12 oz Sour Cream
While pasta
is cooking, combine chicken chunks with
Chipotle Sauce (any flavor) and sour cream in a sauce pan. Heat
slowly until it starts to boil, then reduce heat to simmer and stir
occasionally. Drain cooked
pasta and place in serving bowl. Top
with sauce and garnish with parsley and/or red bell pepper slivers.
Healthy
hint: A delicious substitute is fat free sour cream and whole wheat
pasta. Several great sour
cream substitutes are available for those with allergies to dairy
products. Left over chicken or
turkey may be substituted for the canned chicken.

Fiesta
Meatballs
Mix the
following ingredients:
1 pound extra lean ground beef (or ground turkey, ground pork, etc.)
1 egg
20 saltine crackers
½ jar medium
Chipotle Sauce
Salt to taste
Roll mixture
into meatballs.
Fry the
meatballs on all sides until fully cooked.
Pour the
other half of the jar of
Chipotle Sauce over the top of the meatballs and simmer for another 2-3
minutes.
Place on a
festive dish. They are now ready to serve.
Gourmet
Turkey Sandwiches
1/3 Cup
mayonnaise (low fat or fat free)
1/3 cup
Medium Chipotle Sauce
2 t.
Dijon
mustard
½ lb. smoked or regular turkey
½ lb. Swiss cheese or 8 thin slices
¼ cup purple onions thinly sliced
2 medium tomatoes thinly sliced
8 slices Rye Bread
Preheat over
to 350°. In a small bowl,
combine mayonnaise, mustard, A Fare
to Remember Chipotle Sauce. Mix well.
Place 4 slices bread on cookie sheet.
Using ½ of mayonnaise mixture spread evenly on each slice.
Layer each piece of bread with a slice of cheese, then turkey,
onion and tomatoes. Bake for 10 minutes. Evenly spread remaining
mayonnaise mixture on the 4 remaining bread slices, and top each with a
slice of cheese and add (cheese slice up) to cookie sheet.
Bake 2-4 minutes more or until cheese is browned or bubbling.
Remove cookie sheet from oven and flip cheesy bread onto the layered
slices and serve hot. Serves 4

Grandpa’s
Roast Beef with Fixins
Grandpa
likes to take a frozen beef roast and plop it into the crock pot along
with a large sweet potato or yam, sprinkle with a little salt, dump a jar
of “Medium” or “Hot”
Chipotle Sauce, quarter a small head of cabbage and some whole carrots to
place around the edges before he and Grandma leave the house for the day.
When they come home they needn’t argue about who will prepare
supper. Just plop it on a platter and put some of the liquids in a gravy
boat, either straight or thickened. (Grandpa says it is a good way to keep
the ripples out of the marriage relationship)
Great Pork Chops
4 pork chops
1 TBS Olive Oil
16 oz. Whole Berry Cranberry sauce
8 oz.
Cherry Chipotle Sauce
Sauté the
chops in olive oil until nicely browned; add cranberry sauce and the
Cherry Chipotle Sauce cook till chops are tender.
The sauce may be served over mashed potatoes or rice.
Healthy Pita Pizzas
Homemade
Hummus:
In processor, blend
1 can chickpeas
1/8 tsp. of olive oil
Juice of 1 lemon
Salt and pepper to taste
¼ to ½ jar of your favorite flavor of
Chipotle Sauce
Veggies:
Slice fresh broccoli and asparagus and steam very briefly.
Transfer to ice water (to stop cooking) and drain.
Toss with 1 Tbsp. lemon juice.
Spread
hummus (a thick layer) on pita bread and top with vegetables.
Sprinkle pizza with 1 tsp. lemon juice and bake at 350º for
approximately 15 minutes.
Healthy Turkey
Enchiladas
2 cups
cooked, diced boneless turkey
10 wheat tortillas
10 ¾ oz. can of low fat cream of chicken soup
8 oz. fat free sour cream
¼ to ½ jar
Hot Chipotle Sauce
1 can chopped green chilies, drained
2 green onions chopped
1 cup low fat cheddar cheese
Preheat oven
to 350º Apply cooking spray to 9 x 13 pan.
Mix soup, sour cream, green chilies,
Chipotle Sauce, and onions in a medium-sized bowl.
Spoon at least two Tablespoons filling onto the middle of a
tortilla. Sprinkle cheese over
the filling saving part of the filling and cheese for the top of the
enchiladas. Roll the filled
tortillas into 2” size enchiladas. Place the enchiladas in the baking
dish, folded side down. Place
the enchiladas in the baking pan as close together as possible.
Pour the remaining mixture and cheese over the enchiladas.
Bake at 350º for 35 minutes.

Favorite Recipe for Pinto Beans
2 Cups
Dry Pinto Beans
2 Smoked Ham Hocks
1 teaspoon Salt
16 oz. (2 jars)
Chipotle Sauce (He likes the hot one)
Sort through
the beans to remove any rocks or bad beans.
Wash the beans and put them in the crock pot along with the ham
hocks and cover with plenty of water.
Set the crock pot on high and go away for four or five hours (or
until beans start to soften). Add
the salt and Chipotle Sauce, turn the crock pot to low, and go away for
another two to four hours. (Be sure there is enough water so the beans
don’t dry out.)
Serve with
your favorite salad, and cornbread or tortillas.
He says they always come back for seconds on this one!
P.S. Take the leftover beans,
remove any ham bones, and add canned tomatoes and some brown sugar or
molasses and bake them in a casserole dish for two or three hours (until
the juice thickens). If there
is enough ham left in the beans, all you need to add is a salad and some
fresh bread or cornbread for another delicious meal.
Pineapple
Barbequed Pork Chops
4 thick cut
pork chops
1 jar
Chipotle Cooking/Dipping sauce, pineapple
flavor
4 Pineapple rings, fresh or canned
Season pork
chops with salt and garlic powder to taste and sear them on a hot grill.
Remove them from the grill and place them on separate foil sheets, spread
1/4th jar of sauce on each pork chop and top with a pineapple
ring.
Tent each pork chop and return them
to the grill with a medium heat setting for 15 to 20 minutes.
Remove from the foil tent and place them on a serving tray with
parsley garnish.
Serve with rice or potatoes and sweet corn or other vegetable for a
great summer meal.
Quick
Roast Pork Dinner
Cheryl uses
it to marinate and baste her pork roast.
She says to take your favorite cut of pork and marinate it with
Chipotle Sauce overnight in the refrigerator.
Place it in the crock pot with potatoes, carrots and a generous
coating of
Chipotle Sauce before leaving for work and when you get home you have a
mighty tasty dinner.
Tuna Casserole
1 pkg. 12
oz. wide noodles
1 10 1/2 oz cream of mushroom soup
Fill empty soup can with milk
Two 6 oz cans tuna in water
1 14 oz can peas including liquid
1 cup chopped celery
1 cup sour cream
Add Chipotle Sauce to taste
1 cup crushed potato chips
Cook wide
noodles until done. While they
are cooking, mix tuna, cream of mushroom soup, canned peas
including the juice, milk, celery, and either hot or mild chipotle sauce
to taste. You may add a bit of milk if needed. Drain the noodles. Add
them to the tuna mixture and put in oven until bubbly. Add crushed potato
chips to the top and at the end put some cheddar cheese on top.
You may also cook on the stove top. It is quite yummy, have a salad
on the side, or brush French bread with a bit of olive oil and
chipotle sauce and brown in sauté pan or under broiler.
Turkey
Salad
1 lb. shredded or diced turkey
1 cup chopped celery
2 large apples, chopped
¾ cup fat free mayonnaise
½ jar
Chipotle Sauce (any variety). Combine
all ingredients. Serve on
sliced club bread, crackers, tortillas chips, or a bed of lettuce for a
nice salad.
Turkey
Crock Pot Dinner
Place
needed amount of frozen turkey drumsticks in the crock pot.
Pour ½ to 1 jar of A Fare to
Remember Cherry Chipotle Sauce over them.
Add potatoes, carrots, cabbage or whatever vegetable you like.
Then you’re free to go to work or whatever.
When you come home, you have a delicious meal.
Velvety
Beef
1 lb. Extra lean ground beef
(chicken, pork, turkey, or wild game)
1 Medium onion, chopped
1Green Bell Pepper (or equal parts of red, yellow, or green to equal 1
pepper)
4 oz. (1/2 jar)
chipotle cooking/dipping sauce
1 tsp. olive oil
Salt and pepper to taste
Heat
olive oil in medium size sauté pan over medium-low heat. Add pepper,
onion and ground beef. Cook
over medium-low heat while turning and chopping the browning meat.
When the mixture is done add 4 ounces (1/2 jar) of your favorite
cooking/dipping sauce and reduce heat.
Simmer for about five minutes stirring occasionally.
Serve over rice or with potatoes.
For a tasty treat add mixture to a bed of fresh salad greens and
top with shredded cheese.
Breakfast
Chipotle Scrambled Eggs
3 eggs
½ cup cooked turkey
2 chopped green onions
4 oz, cooked mushrooms
2 cooked potatoes, chopped
8 oz A
Mild Chipotle Sauce
Heat frying
pan with cooking spray. Mix
the eggs, turkey, chopped green onions, mushrooms, cooked potatoes, and 4
oz Chipotle Sauce in a bowl. Pour
into pan and cook eggs. Put onto platter and pour with remaining
Chipotle Sauce over the top.
Serve with toast.
Holiday
Ideas

Add your favorite
Chipotle Sauce to your recipe for sweet potatoes or yams.

Add
Chipotle Sauce, grated cheddar, and/or garlic to mashed potatoes.

For a great cheese ball add 1/3
cup chopped chives to the above mixture and press into a bowl lined
with plastic wrap and refrigerate overnight.
Invert the mixture on a serving dish, remove the plastic, press
chopped or sliced nuts into the surface and garnish.
Makes a beautiful cheese ball that tastes as good as it looks.

Add a tablespoon or two of
Chipotle Sauce to a bowl of turkey soup and enjoy.
Chipotle Sauce adds a unique flavor to stuffing.
(We like to use the pineapple flavor for stuffing.)
And
remember…
Chipotle Sauce is great as a dipping sauce for meat, potatoes, eggs
and even potato chips. It’s
also wonderful with any kind of beans.
Try it on sandwiches, pizza, and burritos too! Try
each of the seven flavors of the Chipotle Sauce.
They are definitely interchangeable!
